
Pan-seared bratwursts with a deeply caramelized casing, served simply with sharp mustard.
1. Prick each bratwurst a few times with a fork to prevent bursting, then let them sit at room temperature for 10 minutes.
2. In a cast-iron skillet over medium heat, melt the butter and add the caraway seeds, toasting for 30 seconds until fragrant.
3. Add the bratwursts and sear, turning occasionally, for 6–8 minutes until deeply golden brown on all sides.
4. Pour in the beer, reduce heat to medium-low, and simmer uncovered for 8–10 minutes until the liquid reduces to a glossy glaze and the sausages are cooked through.
5. Rest the bratwursts on a wooden board for 2 minutes, then serve alongside the whole-grain mustard and fresh thyme sprigs.
