Apple Fritters

Crisp battered rings with a warm cinnamon-apple core, dusted in powdered sugar straight from the oil.

Ingredients

  • 3 medium apples, peeled and cut into 1/2-inch chunks
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons granulated sugar
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • vegetable oil, for frying (about 3 cups)
  • 1/2 cup powdered sugar, for dusting

    1. Heat oil in a heavy-bottomed pot or deep skillet to 375°F (190°C), checking with a thermometer for consistency.

    2. Whisk together the flour, baking powder, cinnamon, nutmeg, and granulated sugar in a large bowl, then stir in the eggs, milk, vanilla, and melted butter until a thick batter just comes together — a few lumps are fine.

    3. Fold the apple chunks evenly into the batter so each piece is well coated.

    4. Drop heaping spoonfuls of the batter into the hot oil in batches of 4–5, frying for 2–3 minutes per side until deep golden brown and cooked through.

    5. Remove with a slotted spoon and drain on a wire rack or paper towels for one minute.

    6. Dust generously with powdered sugar and serve immediately while steam still rises from the centers.
