Slow-cooked beef and kidney bean chili that builds deep flavor all day with minimal effort.
1. In a large skillet over medium-high heat, brown the ground beef until no pink remains, breaking it up as it cooks. Drain excess fat and transfer to the crockpot.
2. Add the onion, garlic, and bell pepper to the crockpot, then pour in the crushed tomatoes, tomato paste, and beef broth.
3. Stir in the kidney beans, chili powder, cumin, smoked paprika, oregano, chili flakes, salt, and pepper until everything is well combined.
4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, stirring once halfway through if possible.
5. Taste and adjust seasoning before serving, then ladle into bowls and top generously with shredded cheddar, letting it melt into the hot chili.
