Classic beef meatloaf with a tangy glaze, served alongside buttery mashed potatoes.
1. Preheat oven to 350°F. In a large bowl, combine the ground beef, onion, garlic, eggs, breadcrumbs, milk, Worcestershire sauce, thyme, smoked paprika, and black pepper, mixing until just combined — do not overwork the meat.
2. Shape the mixture into a loaf on a rimmed baking sheet or press it into a 9x5 loaf pan. Stir together the ketchup, brown sugar, and apple cider vinegar, then spread half the glaze evenly over the top of the loaf.
3. Bake for 45 minutes, then spread the remaining glaze over the top and continue baking for another 15 minutes until the internal temperature reaches 160°F and the glaze is caramelized. Let rest 10 minutes before slicing.
4. While the meatloaf rests, boil the potatoes in well-salted water until completely tender when pierced with a fork, about 18–20 minutes, then drain thoroughly.
5. Return the drained potatoes to the warm pot and mash with butter until smooth, then stir in the warm heavy cream and garlic powder until the potatoes are creamy and fluffy. Season with salt and pepper to taste.
6. Slice the meatloaf thickly and serve alongside a generous mound of the mashed potatoes on a warm plate.
