A bone-in turkey breast roasted under a coarse crust of parsley, rosemary, and garlic until deeply golden and juicy.
1. Pat the turkey breast dry and let it sit at room temperature for 30 minutes. Preheat the oven to 375°F (190°C).
2. Mix together the parsley, rosemary, garlic, Dijon mustard, olive oil, lemon zest, salt, pepper, and panko in a small bowl until a coarse paste forms.
3. Loosen the skin of the turkey breast gently with your fingers and spread half the herb paste directly onto the meat beneath; press the remaining paste firmly over the outside of the skin.
4. Place the turkey breast skin-side up on a rack set in a roasting pan and roast for 55–65 minutes, until the crust is deep golden and an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
5. Rest the turkey uncovered on a cutting board for 10 minutes, then slice from one end, fanning the pieces beside the roast to serve.
