Herbed bread cubes baked until golden and crisp, built for drowning in turkey gravy.
1. Spread the bread cubes on a baking sheet and toast in a 300°F oven for 20 minutes until dry and lightly crisp, then transfer to a large mixing bowl.
2. Melt the butter in a skillet over medium heat and sauté the onion and celery for 8 minutes until softened, then add the garlic, thyme, sage, and rosemary and cook one more minute.
3. Pour the vegetable mixture over the bread cubes, then add the beaten eggs and stock and toss gently until the bread is evenly moistened but not soggy.
4. Season with salt and pepper, fold in the parsley, and transfer the mixture to a buttered 9x13-inch baking dish, pressing it into an even layer.
5. Cover with foil and bake at 375°F for 30 minutes, then uncover and bake another 20 minutes until the top is golden brown and crisp.
6. Let the stuffing rest for 5 minutes before serving, then pour warm turkey gravy over the top at the table.
