A bone-in turkey breast roasted under a thick layer of garlic herb butter, sliced thick and glistening.
1. Preheat the oven to 375°F. Pat the turkey breast completely dry with paper towels.
2. Mix the softened butter with the garlic, rosemary, thyme, sage, lemon zest, smoked paprika, salt, and pepper until fully combined.
3. Loosen the skin over the breast meat with your fingers and spread half the herb butter directly onto the meat beneath the skin, then rub the remaining butter all over the outside. Drizzle with olive oil.
4. Place the turkey breast on a rack in a roasting pan and roast for 75–90 minutes, until an instant-read thermometer inserted into the thickest part reads 165°F.
5. Transfer to a cutting board, tent loosely with foil, and rest for 15 minutes before slicing thickly against the grain.
6. Spoon any pooled pan juices over the slices before serving.
