Bratwurst with Sauerkraut

Pan-seared bratwurst paired with caraway-scented sauerkraut, simple and deeply savory.

Ingredients

  • 2 bratwurst links
  • 1 cup sauerkraut, drained
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon caraway seeds
  • 1/2 teaspoon whole-grain mustard
  • 1/4 cup dry white wine or lager beer
  • 1 tablespoon unsalted butter
  • 1 tablespoon neutral oil
  • Freshly ground black pepper to taste

    1. Heat oil in a heavy skillet over medium heat. Add the bratwurst and cook, turning occasionally, until deeply golden-brown on all sides, about 12 minutes total. Remove and set aside.

    2. Reduce heat to medium-low and melt butter in the same skillet. Add the onion and cook, stirring, until softened and lightly caramelized, about 6 minutes.

    3. Add garlic and caraway seeds, stirring for 30 seconds until fragrant.

    4. Pour in the wine or beer, scraping up any browned bits from the pan bottom. Stir in the sauerkraut and mustard, then season with black pepper.

    5. Nestle the bratwurst back into the sauerkraut, cover loosely, and simmer over low heat for 8 minutes until the sausages are cooked through and the flavors have melded.

    6. Transfer to a plate, mounding the sauerkraut alongside the bratwurst, and serve immediately.
