Day-old stuffing pressed into a waffle iron turns crispy outside, tender inside in minutes.
1. Preheat your waffle iron to medium-high heat. In a large bowl, beat the eggs and mix them thoroughly into the chilled stuffing along with the celery, parsley, thyme, and pepper until everything is evenly combined.
2. Brush both plates of the waffle iron generously with melted butter to prevent sticking.
3. Scoop roughly one cup of the stuffing mixture onto the center of the waffle iron and press the lid down firmly, flattening the mixture to fill the ridges.
4. Cook for 6 to 8 minutes without lifting the lid, until the waffle is deeply golden brown and releases cleanly from the iron.
5. Transfer the finished waffle to a wire rack to keep it crisp while you repeat with the remaining mixture.
6. Serve immediately while the edges are still toasted and crunchy.
