Atole

A warm, thick masa drink spiced with cinnamon — simple, grounding, and deeply satisfying.

⏱ 20 minServes 25 min prep15 min cook

Ingredients

  • 1/4 cup masa harina
  • 3 cups whole milk
  • 1 cup water
  • 2 cinnamon sticks
  • 3 tablespoons piloncillo, grated (or dark brown sugar)
  • 1/2 teaspoon pure vanilla extract
  • 1 pinch fine salt

Steps

  1. 1

    1. Whisk the masa harina into the water in a small bowl until fully dissolved with no lumps, then set aside.

  2. 2

    2. Combine the milk, cinnamon sticks, and piloncillo in a medium saucepan over medium heat, stirring occasionally until the piloncillo dissolves and the milk is steaming but not boiling.

  3. 3

    3. Remove the cinnamon sticks, then slowly pour the masa slurry into the hot milk while whisking constantly to prevent lumps.

  4. 4

    4. Reduce the heat to medium-low and cook, stirring continuously, until the mixture thickens enough to lightly coat the back of a spoon, about 8 to 10 minutes.

  5. 5

    5. Stir in the vanilla extract and salt, then taste and adjust sweetness if needed.

  6. 6

    6. Ladle into mugs and serve immediately while steaming hot.
