A lacquered, mahogany-crusted spiral ham with a sticky amber glaze that caramelizes into every cut layer.
1. Remove the ham from the refrigerator 45 minutes before cooking and preheat the oven to 325°F. Place the ham cut-side down in a roasting pan and cover tightly with foil.
2. Bake covered for about 15 minutes per pound, until an internal thermometer reads 130°F near the bone.
3. While the ham bakes, melt butter in a small saucepan over medium heat, then stir in honey, brown sugar, mustard, apple cider vinegar, cloves, cinnamon, and smoked paprika. Simmer for 3–4 minutes until slightly thickened.
4. Remove foil, brush half the glaze generously over the entire surface, working it into the spiral cuts. Raise the oven temperature to 425°F and return the ham uncovered for 10 minutes.
5. Brush on the remaining glaze and bake another 10–15 minutes until the exterior is deeply caramelized and mahogany brown. Watch closely to prevent burning.
6. Rest the ham for 15 minutes before transferring to a serving plate, fanning the spiral slices slightly outward at the base.
