A bone-in ham roasted until its glaze turns deep mahogany and lacquered, with a tender rosy interior.
1. Remove the ham from the refrigerator 30 minutes before cooking. Preheat the oven to 325°F. Score the ham's surface in a diamond pattern, cutting about 1/4 inch deep.
2. Combine the brown sugar, Dijon mustard, apple cider vinegar, butter, orange juice, cloves, paprika, and cinnamon in a small saucepan over medium heat. Stir until the sugar dissolves and the glaze thickens slightly, about 4 minutes.
3. Place the ham cut-side down in a roasting pan and brush generously with half the glaze. Tent loosely with foil and roast for 1 hour 30 minutes.
4. Remove the foil, brush with the remaining glaze, and return to the oven uncovered. Roast for another 30-45 minutes, basting every 15 minutes, until the surface is deep mahogany and caramelized.
5. Rest the ham uncovered for 15 minutes before carving. Slice against the grain into even pieces and arrange on a platter, fanning the slices slightly away from the joint.
