A bone-in spiral ham lacquered with a sticky cranberry glaze that caramelizes into a deep ruby crust.
1. Preheat your oven to 325°F. Place the ham cut-side down in a roasting pan and cover tightly with foil. Bake for about 15 minutes per pound, until the internal temperature reaches 130°F.
2. While the ham bakes, combine the cranberry sauce, orange juice, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, cloves, and black pepper in a small saucepan over medium heat. Stir and simmer for 8–10 minutes until the glaze thickens slightly, then remove from heat.
3. About 30 minutes before the ham finishes its initial bake, remove the foil and brush a generous layer of glaze over the entire surface, working it between the spiral slices.
4. Return the ham to the oven uncovered and apply two more rounds of glaze every 10 minutes, until the surface is deeply lacquered, caramelized, and the internal temperature reaches 140°F.
5. Remove the ham from the oven and let it rest for 15 minutes before transferring to a serving plate. The glaze will set into a glossy, sticky coating as it cools slightly.
6. Fan the pre-cut spiral slices slightly apart at one end for serving and spoon any pan drippings mixed with remaining glaze over the top.
