Big, chewy cookies packed with oats, peanut butter, chocolate chips, and M&Ms — no flour needed.
1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. Beat together the peanut butter, butter, brown sugar, and granulated sugar until smooth, then mix in the eggs, vanilla, and baking soda until fully combined.
3. Stir in the rolled oats until a thick dough forms, then fold in the chocolate chips and M&Ms, reserving a handful of M&Ms to press on top.
4. Scoop large balls of dough (about 3 tablespoons each) onto the prepared baking sheets, spacing them 3 inches apart, and press the reserved M&Ms onto the tops.
5. Bake for 10–12 minutes until the edges are set but the centers still look slightly underdone, then let the cookies cool on the pan for 5 minutes before transferring to a wire rack.
