Herb-rubbed turkey breast cooked low and slow until the meat stays genuinely juicy and the skin turns golden.
1. Mix the olive oil, garlic, rosemary, thyme, smoked paprika, onion powder, salt, and pepper together in a small bowl to form a paste.
2. Loosen the skin of the turkey breast with your fingers and spread the softened butter directly onto the meat, then rub the herb paste all over the outside including under the skin.
3. Pour the chicken broth into the bottom of the slow cooker, then place the turkey breast skin-side up inside.
4. Cook on LOW for 5 to 6 hours, until an instant-read thermometer inserted into the thickest part reads 165°F.
5. Transfer the turkey breast to a cutting board and rest uncovered for 10 minutes, then carve one side into even slices and fan them alongside the uncut portion on a plate before serving.
