A bone-in ham roasted until sticky and caramelized with a sweet, spiced glaze.
1. Remove the ham from the refrigerator 30 minutes before cooking. Preheat the oven to 325°F and place the ham cut-side down in a roasting pan.
2. Using a sharp knife, score the surface of the ham in a diamond pattern, cutting about 1/4 inch deep.
3. Whisk together the brown sugar, Dijon mustard, apple cider vinegar, honey, cloves, cinnamon, paprika, and black pepper in a small saucepan over medium heat until the sugar dissolves and the glaze thickens slightly, about 3 minutes.
4. Brush a generous layer of glaze over the entire ham, working it into the scored cuts. Cover loosely with foil and roast for 1 hour 30 minutes.
5. Remove the foil, brush on another thick layer of glaze, and continue roasting uncovered, basting every 20 minutes, until the surface is deeply caramelized and amber, about 45 more minutes.
6. Rest the ham for 15 minutes before slicing. Slice a few pieces at one end and lean them against the main piece for serving.
