A bone-in ham lacquered in a dark, sticky brown sugar glaze with a rosy, juicy interior.
1. Remove the ham from the refrigerator 45 minutes before cooking and preheat the oven to 325°F. Score the surface in a crosshatch diamond pattern about 1/2 inch deep.
2. Place the ham cut-side down in a roasting pan fitted with a rack and cover tightly with foil. Bake for 1 hour 30 minutes.
3. While the ham bakes, combine the brown sugar, Dijon mustard, apple cider vinegar, butter, cinnamon, cloves, smoked paprika, and pineapple juice in a small saucepan over medium heat. Stir and simmer for 5–7 minutes until thickened and glossy.
4. Remove the foil, increase oven temperature to 400°F, and brush a generous layer of glaze over the entire surface of the ham. Return uncovered to the oven.
5. Baste with additional glaze every 15 minutes for 45 minutes, until the exterior is deeply caramelized and mahogany in color and an instant-read thermometer reads 140°F internally.
6. Rest the ham on a cutting board for 15 minutes before transferring to a plate, then carve into slices starting from the flat end, fanning them slightly for serving.
