Boldly seasoned ground beef packed into warm tortillas with fresh, vibrant toppings.
1. Heat oil in a large skillet over medium-high heat, add onion and cook for 3 minutes until softened, then stir in garlic and cook for another minute.
2. Add the ground beef, breaking it apart with a spoon, and cook until browned all over with no pink remaining, about 6-8 minutes.
3. Stir in chipotle paste, tomato paste, cumin, smoked paprika, oregano, and chili flakes, then pour in the beef stock and simmer for 5 minutes until the mixture thickens and coats the meat. Season with salt and pepper.
4. Warm tortillas directly over a gas flame or in a dry skillet for 20-30 seconds per side until lightly charred and pliable.
5. Spoon the beef onto each tortilla, then top with cheese, salsa, avocado, a dollop of sour cream, and fresh cilantro.
6. Serve immediately on a board with lime wedges alongside for squeezing over.
