Ingredients

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 can (15 oz) refried beans
  • 1 cup chunky salsa
  • 2 cups shredded Mexican-blend cheese
  • 1 cup sour cream
  • 1 can (2.25 oz) sliced black olives, drained
  • 1/2 cup crushed tortilla chips
  • 1 small zip-lock bag (for piping sour cream ghosts)
  • 1/4 cup pickled jalapeño slices
  • 1 tablespoon olive oil

Steps

  1. 1

    1. Preheat the oven to 375°F. Heat olive oil in a skillet over medium-high heat, add the onion and garlic, and cook for 2 minutes until softened. Add the ground beef, breaking it apart, and cook until browned. Drain excess fat, stir in the taco seasoning and salsa, and simmer for 3 minutes.

  2. 2

    2. Spread the refried beans in an even layer across the bottom of a 9x13-inch baking dish, then spoon the seasoned beef mixture evenly over the top.

  3. 3

    3. Sprinkle the shredded cheese over the beef layer, then scatter the jalapeño slices across the cheese. Bake for 18–20 minutes until the cheese is fully melted and the edges are bubbling.

  4. 4

    4. While the dip bakes, spoon the sour cream into a zip-lock bag and snip a small corner off. Remove the dip from the oven and pipe small ghost shapes across the surface of the cheese.

  5. 5

    5. Stand sliced black olives upright in rows to form tombstones among the ghosts. Dot two tiny olive pieces onto each ghost for eyes.

  6. 6

    6. Scatter crushed tortilla chips around the ghosts and tombstones to resemble graveyard dirt. Serve immediately with extra tortilla chips for dipping.
