Crispy breaded pork cutlets topped with marinara sauce and melted mozzarella and Parmesan cheeses, then baked.
Preheat oven to 375°F (190°C). Slice pork loin into 1/2-inch thick medallions and pound to 1/4-inch thickness.
Set up a dredging station: flour on one plate, whisked egg in a shallow bowl, and bread crumbs mixed with salt, pepper, and oregano on a second plate.
Dredge each pork cutlet first in flour, then egg, then bread crumbs, ensuring a full coating.
Heat vegetable oil in a large oven-safe skillet over medium-high heat. Fry cutlets for 2-3 minutes per side until golden brown, then remove excess oil with paper towels.
Spread a thin layer of marinara sauce on the bottom of the skillet. Arrange the fried pork cutlets over the sauce, then top each with more marinara, mozzarella, and Parmesan cheese.
Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden.
