Flaky pastry cups hold molten brie and tart cranberry sauce — a two-bite contrast of textures.
1. Preheat oven to 400°F (200°C) and lightly grease a 24-cup mini muffin tin.
2. Roll out the puff pastry on a lightly floured surface and cut into 24 equal squares, then press each square into a muffin cup to form a small bowl shape.
3. Stir the rosemary and orange zest into the cranberry sauce, then spoon a small amount into each pastry cup.
4. Place a cube of brie on top of the cranberry sauce in each cup, then brush the exposed pastry edges with the beaten egg.
5. Bake for 12-15 minutes until the pastry is deep golden and the brie is fully melted and bubbling.
6. Remove from the tin, drizzle lightly with honey, and let rest two minutes before serving warm.
