Buttery lattice crust over spiced apples, finished with a glossy salted caramel pour.
1. Make the salted caramel: melt granulated sugar in a heavy saucepan over medium heat until deep amber, then whisk in butter, followed by cream, and stir in flaky salt. Set aside to cool slightly.
2. Toss apple slices with brown sugar, cinnamon, nutmeg, allspice, cornstarch, and apple cider vinegar until evenly coated.
3. Press one sheet of pie dough into a 9-inch pie dish, fill with the apple mixture, and drizzle half the caramel over the top.
4. Cut the second dough sheet into strips and weave a lattice over the filling, crimping the edges to seal; brush with egg wash and sprinkle with coarse sugar.
5. Bake at 200°C (400°F) for 20 minutes, then reduce heat to 175°C (350°F) and bake a further 35–40 minutes until the crust is deep golden and the filling is bubbling.
6. Remove from the oven, drizzle the remaining caramel over the lattice, and allow to cool for at least 2 hours before slicing.
