Tender chicken coated in a savory peanut sauce, baked until golden, and finished with a crunchy garlic and herb breadcrumb crust.
Preheat oven to 400°F (200°C). Lightly grease a baking dish with a bit of avocado oil.
In a medium bowl, whisk together creamy peanut butter, soy sauce, 1 tbsp avocado oil, lime juice, maple syrup, and grated ginger until smooth.
Pat chicken dry, then coat evenly with about 3/4 of the peanut sauce, reserving the rest for serving if desired.
Arrange chicken in the prepared baking dish. Bake for 20-25 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C).
Remove chicken from oven, sprinkle generously with Garlic & Herb Bread Crumbs over the top.
Return to oven and bake for another 5-10 minutes, or until the bread crumbs are golden brown and crispy.
Serve hot, optionally drizzled with any remaining peanut sauce.
