Thin chicken cutlets pan-fried to a golden crisp in avocado oil, coated in garlic herb bread crumbs, served with a savory peanut dipping sauce.
Season chicken cutlets lightly with salt and pepper. Set up a breading station: one shallow dish with flour, one with whisked egg, and one with garlic & herb bread crumbs.
Dredge each chicken cutlet first in flour, shaking off excess, then dip in egg, and finally press firmly into bread crumbs to coat completely.
Heat 1/2 cup avocado oil in a large skillet over medium-high heat until shimmering. Ensure oil is hot enough for frying.
Carefully place 2-3 breaded chicken cutlets in the hot oil (do not overcrowd) and fry for 3-4 minutes per side, until golden brown and cooked through. Remove to a wire rack to drain and repeat with remaining cutlets, adding more oil if needed.
While chicken cooks, prepare the dipping sauce: In a small bowl, whisk together peanut butter, soy sauce, honey/sugar, and warm water until smooth and desired consistency is reached.
Serve the hot crispy chicken cutlets immediately with the zesty peanut dipping sauce on the side.
