A baked egg noodle casserole with a custardy interior and shatteringly crisp golden top.
1. Preheat your oven to 375°F (190°C) and generously butter a 9x13 inch ceramic baking dish. Cook the egg noodles in salted boiling water until just shy of al dente, then drain well.
2. In a large bowl, whisk together the eggs, sour cream, cottage cheese, softened cream cheese, melted butter, sugar, vanilla, cinnamon, and salt until smooth and well combined.
3. Fold the drained noodles into the cheese mixture until fully coated, then pour everything into the prepared baking dish and spread into an even layer.
4. Bake uncovered for 45–55 minutes, until the top is deeply golden brown and caramelized and the center is set with only a slight wobble.
5. Let the kugel rest for 10 minutes before cutting. Scatter fresh dill over the top just before serving.
