Flaky lattice crust, spiced apple filling, and a glossy salted caramel drizzle baked until deeply golden.
1. Make the caramel: heat granulated sugar in a saucepan over medium heat, swirling until fully melted and amber. Remove from heat, stir in butter, then slowly whisk in heavy cream. Add flaky salt and set aside to cool.
2. Toss apple slices with brown sugar, cinnamon, nutmeg, allspice, cornstarch, and lemon juice until evenly coated.
3. Press one sheet of pie dough into a 9-inch pie dish. Pour in the apple filling, mound slightly in the center, then drizzle half the salted caramel over the filling.
4. Cut the second dough sheet into strips and weave a lattice pattern over the filling, pressing the edges to seal and crimping the border with your fingers.
5. Brush the lattice with beaten egg and bake at 400°F (200°C) for 20 minutes, then reduce to 375°F (190°C) and bake a further 35–40 minutes until the crust is deep golden and the filling is bubbling.
6. Let the pie cool for at least one hour before serving, then drizzle the remaining salted caramel over the top.
