Ingredients

  • 2 medium apples, peeled and finely diced
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine salt
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1 cup powdered sugar, sifted
  • 3 tablespoons heavy cream
  • 1/2 teaspoon pure vanilla extract (for glaze)

Steps

  1. 1

    1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, and salt.

  2. 2

    2. In a separate bowl, whisk together the brown sugar, eggs, milk, melted butter, and vanilla extract until smooth and combined.

  3. 3

    3. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined — do not overmix. Fold in the diced apple.

  4. 4

    4. Divide the batter evenly among the muffin cups, filling each about three-quarters full. Bake for 20–22 minutes, until a toothpick inserted in the center comes out clean and the tops are golden brown. Cool in the tin for 5 minutes, then transfer to a wire rack.

  5. 5

    5. While the muffins cool, whisk together the powdered sugar, heavy cream, and vanilla extract in a small bowl until a smooth, pourable glaze forms. Add an extra splash of cream if needed to loosen.

  6. 6

    6. Once the muffins are just slightly warm, drizzle the vanilla glaze generously over each one and serve.
