A fast and savory stir-fry featuring a rich peanut sauce, cooked in avocado oil, and topped with crispy garlic herb bread crumbs for texture.
In a small bowl, whisk together peanut butter, soy sauce, honey/sugar, and water/broth until smooth. Set aside.
Heat 2 tbsp avocado oil in a large skillet or wok over medium-high heat. Add chicken/tofu and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
Add 1 tbsp avocado oil to the same skillet. Add mixed vegetables and stir-fry for 4-6 minutes until tender-crisp.
Return chicken/tofu to the skillet. Pour in the prepared peanut sauce and toss to coat everything. Cook for 2-3 minutes, allowing sauce to thicken slightly.
Meanwhile, in a small dry pan, toast the garlic & herb bread crumbs over medium heat for 2-3 minutes until golden and fragrant.
Serve the stir-fry immediately, topped with the toasted garlic & herb bread crumbs.
