Slow-cooked beef and kidney bean chili that builds deep flavor with minimal effort.
1. In a large skillet over medium-high heat, brown the ground beef until no pink remains, breaking it apart as it cooks. Drain excess fat and transfer to the crockpot.
2. Add the diced onion, garlic, and bell pepper to the crockpot along with the kidney beans, crushed tomatoes, tomato paste, and beef broth.
3. Stir in the chili powder, cumin, smoked paprika, oregano, chili flakes, salt, and pepper until everything is evenly combined.
4. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, stirring once or twice if possible.
5. Taste and adjust seasoning before serving, then ladle into bowls and top generously with shredded cheddar, letting it melt over the hot chili.
