⏱ 20 minServes 25 min prep15 min cook

Ingredients

  • 2 cups whole milk
  • 1 cup water
  • 3 tablespoons masa harina
  • 3 tablespoons unsweetened cocoa powder
  • 2 oz dark chocolate (70%), roughly chopped
  • 3 tablespoons piloncillo or dark brown sugar
  • 1 cinnamon stick
  • 1/4 teaspoon pure vanilla extract
  • pinch of salt

Steps

  1. 1

    1. Whisk the masa harina into the water in a small bowl until completely smooth with no lumps, then set aside.

  2. 2

    2. Combine the milk, piloncillo, cinnamon stick, and salt in a medium saucepan over medium heat, stirring until the piloncillo dissolves and the milk is steaming but not boiling.

  3. 3

    3. Whisk the cocoa powder into the warm milk mixture until fully incorporated, then pour in the masa slurry in a slow, steady stream while whisking constantly.

  4. 4

    4. Reduce heat to medium-low and cook, stirring continuously with a wooden spoon or whisk, for 8–10 minutes until the atole thickens enough to lightly coat the back of a spoon.

  5. 5

    5. Remove the cinnamon stick, stir in the chopped dark chocolate and vanilla extract, and whisk until the chocolate is completely melted and the drink is glossy and smooth.

  6. 6

    6. Pour into a mug and serve immediately, optionally dusted with a pinch of cocoa powder.
