A baked egg noodle casserole with a custardy interior and deeply caramelized, crispy top.
1. Preheat the oven to 180°C (350°F) and generously butter a 23x33cm ceramic baking dish. Cook the egg noodles in salted boiling water until just al dente, then drain and set aside.
2. Beat the cream cheese until smooth, then whisk in the sour cream, milk, melted butter, granulated sugar, vanilla, cinnamon, and salt until fully combined.
3. Add the beaten eggs to the cream cheese mixture and whisk until uniform, then fold in the drained noodles until every strand is coated.
4. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the brown sugar evenly over the top.
5. Bake for 55–65 minutes, until the top is deeply golden and caramelized and the center is just set with a slight wobble. Rest for 10 minutes before slicing and serving.
