Grilled bratwursts with a crackling, caramelized casing served with sharp mustard and fresh herbs.
1. Remove bratwursts from the refrigerator 15 minutes before cooking to bring them closer to room temperature, then prick each one lightly with a fork just twice to prevent bursting.
2. Preheat a grill or cast-iron grill pan over medium heat, then rub the grates lightly with butter to prevent sticking.
3. Place the bratwursts on the grill and cook, turning every 3–4 minutes, until all sides are deep golden-brown and the casing is visibly caramelized, about 12–15 minutes total.
4. While the sausages cook, mix together the whole-grain and Dijon mustards with the caraway seeds and cracked black pepper in a small dish.
5. Transfer the bratwursts to a wooden board, tent loosely with foil, and rest for 3 minutes so the juices redistribute and the casing firms up with a satisfying crackle.
6. Garnish the board with a sprig of fresh thyme and serve alongside the mustard dipping dish.
