A dense, golden cake soaked in floral honey and finished with crunchy toasted almonds.
1. Preheat the oven to 175°C (350°F). Grease a 20cm round cake pan and line the bottom with parchment paper.
2. Whisk together the flour, baking powder, baking soda, cinnamon, cardamom, and salt in a large bowl.
3. In a separate bowl, whisk together the honey, oil, eggs, warm tea, sour cream, and vanilla until smooth and combined.
4. Pour the wet ingredients into the dry and fold gently until just no streaks of flour remain, then pour the batter into the prepared pan.
5. Bake for 35–40 minutes until deep golden and a skewer inserted in the center comes out clean; while still hot, brush the top generously with the remaining honey.
6. Allow the cake to cool for 15 minutes in the pan, then transfer to a plate, scatter toasted almonds over the glazed surface, and finish with an extra drizzle of honey before serving.
