Tart cranberries cooked down with orange and rosemary into a glossy, jewel-toned sauce.
1. Combine cranberries, orange juice, water, and sugar in a medium saucepan over medium heat, stirring until the sugar dissolves.
2. Add the orange zest, cinnamon, cloves, and one rosemary sprig to the pan.
3. Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until cranberries burst and the sauce thickens.
4. Remove the rosemary sprig and let the sauce cool for 5 minutes off the heat.
5. Transfer to a small ceramic bowl and allow to cool to room temperature; the sauce will continue to set as it cools.
6. Before serving, drag a fresh rosemary sprig gently across the surface to release its fragrance and garnish.
