Creamy avocado wedges coated in garlic herb breadcrumbs and baked until crispy, served with a zesty, spicy peanut dipping sauce.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice each avocado in half, remove pit, peel, and cut each half into 4-5 wedges.
Set up a dredging station: one shallow bowl with flour, one with beaten egg, and one with Garlic & Herb Bread Crumbs.
Dip each avocado wedge first in flour, then egg, then coat thoroughly with breadcrumbs, pressing gently. Arrange on the prepared baking sheet.
Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
While avocados bake, prepare the dip: In a small bowl, whisk together Creamy Peanut Butter, lime juice, chili garlic sauce, and 2 tbsp warm water until smooth. Add more water if needed to reach desired consistency. Stir in the NON-GMO AVOCADO OIL EXPELLER PRESSED for richness.
Serve the crispy avocado bites immediately with the spicy peanut dip.
