A bone-in turkey breast roasted under a thick herb butter crust, sliced thick and glossy.
1. Preheat the oven to 375°F. Pat the turkey breast completely dry with paper towels and place it on a rack in a roasting pan.
2. Mix the softened butter with the garlic, rosemary, thyme, sage, lemon zest, paprika, salt, and pepper until fully combined.
3. Rub olive oil all over the turkey, then press the herb butter generously over the entire surface and under the skin wherever possible.
4. Roast for 75–90 minutes, basting with pan drippings every 30 minutes, until the internal temperature reaches 165°F and the crust is deep golden brown.
5. Rest the turkey breast uncovered on a cutting board for 15 minutes before slicing into thick pieces, spooning pooled herb butter over each slice to serve.
