Tender, spiced donuts baked with reduced apple cider for deep autumn flavor.
1. Simmer the apple cider in a small saucepan over medium heat until reduced to about 1/2 cup, roughly 15–20 minutes; let it cool completely.
2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt in a large bowl.
3. In a separate bowl, whisk the eggs, brown sugar, buttermilk, melted butter, vanilla, and cooled reduced cider until smooth, then fold into the dry ingredients until just combined — do not overmix.
4. Grease a standard donut pan, pipe or spoon the batter into the cavities filling each about 3/4 full, and bake at 200°C (400°F) for 10–12 minutes until risen and a toothpick comes out clean.
5. Let donuts cool in the pan for 5 minutes, then turn out onto a rack.
6. Brush each warm donut with melted butter, then toss in the cinnamon-sugar mixture to coat all sides before serving.
