Crisp battered apple rings with a warm cinnamon core, finished under a snow of powdered sugar.
1. Whisk together the flour, baking powder, cinnamon, nutmeg, and granulated sugar in a large bowl, then stir in the milk, egg, and vanilla until a smooth, thick batter forms.
2. Heat oil in a heavy-bottomed pot or deep skillet over medium-high heat until it reaches 375°F on a thermometer.
3. Working in batches, dip each apple ring into the batter, letting the excess drip off, then carefully lower into the hot oil.
4. Fry for 2 to 3 minutes per side until deeply golden and crisp, then transfer to a wire rack lined with paper towels to drain.
5. While still warm, dust generously with powdered sugar and serve immediately so the edges stay crisp and the apple inside stays tender.
