Golden skin, juicy meat, and fragrant herb butter — a weeknight-friendly alternative to a whole bird.
1. Preheat your oven to 375°F (190°C). Pat the turkey breast thoroughly dry with paper towels and place it skin-side up in a roasting pan or oven-safe skillet.
2. Mix the softened butter with the garlic, rosemary, thyme, parsley, lemon zest, salt, and pepper until fully combined.
3. Carefully loosen the skin from the meat with your fingers and spread half the herb butter directly onto the flesh, then rub the remaining butter all over the outside of the skin. Drizzle olive oil over the top.
4. Pour the chicken broth into the bottom of the pan to keep the drippings from burning, then roast until an instant-read thermometer inserted into the thickest part reads 165°F, about 70–80 minutes.
5. Remove from the oven and tent loosely with foil. Let the turkey rest for 15 minutes before carving to allow juices to redistribute.
6. Carve slices from one side, fanning them out on a serving plate with the golden skin facing up, and spoon any pan juices over the top before serving.
