Ingredients

  • 2 (6 oz) salmon fillets
  • 1/4 cup Garlic & Herb Bread Crumbs
  • 1 tbsp NON-GMO AVOCADO OIL EXPELLER PRESSED
  • 2 tbsp Creamy Peanut Butter
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp lime juice
  • 1 tbsp warm water
  • Salt and black pepper to taste

Steps

  1. 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 2

Pat salmon fillets dry and season with salt and pepper. Drizzle 1 tbsp of NON-GMO AVOCADO OIL EXPELLER PRESSED over the salmon, then press Garlic & Herb Bread Crumbs onto the top of each fillet.

  3. 3

Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.

  4. 4

While salmon bakes, prepare the peanut drizzle: In a small bowl, whisk together Creamy Peanut Butter, soy sauce, lime juice, and warm water until smooth and drizzly consistency. Add more water if needed.

  5. 5

Once salmon is done, transfer to plates. Drizzle the creamy peanut sauce over the salmon and serve immediately.
