Tender spiced apples under a buttery oat topping, baked until the edges bubble and caramelize.
1. Preheat the oven to 350°F (175°C) and lightly butter a ceramic baking dish.
2. Toss the sliced apples with lemon juice, granulated sugar, 2 tsp cinnamon, and nutmeg until evenly coated, then spread in an even layer in the prepared dish.
3. In a bowl, combine oats, flour, brown sugar, remaining cinnamon, and cardamom, then work in the cold butter with your fingers until the mixture resembles coarse, clumpy crumbs.
4. Scatter the topping evenly over the apples, pressing it down very lightly so it holds.
5. Bake for 45–50 minutes, until the topping is deep golden brown and the apple juices are visibly bubbling around the edges.
6. Let rest for 10 minutes before serving so the filling thickens slightly.
