Pan-seared until the casing crackles and caramelizes, served simply with sharp mustard.
1. Score each bratwurst lightly with three shallow diagonal cuts on each side to help the casing render evenly without bursting.
2. Melt the butter in a heavy skillet over medium heat, then add the caraway seeds and toast for 30 seconds until fragrant.
3. Add the bratwursts and sear undisturbed for 4 minutes per side until deeply golden and caramelized.
4. Pour in the beer, drop in the thyme sprigs, and cover the pan for 3 minutes to cook through and build a glossy glaze.
5. Uncover, increase heat to medium-high, and cook another 1-2 minutes until the liquid reduces and the casings tighten and shimmer.
6. Rest for 2 minutes on a board, then serve alongside the whole-grain mustard with the thyme sprig as garnish.
