⏱ 1 hr 45 minServes 615 min prep1 hr 30 min cook

Ingredients

  • 4 large carrots, peeled and sliced into 1-inch rounds
  • 2 medium sweet potatoes, peeled and cut into 1-inch chunks
  • 1 cup dried apricots
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter or coconut oil
  • 1/2 cup fresh orange juice
  • 1/2 cup vegetable or chicken broth
  • 1 teaspoon orange zest
  • 1/2 teaspoon kosher salt

Steps

  1. 1

    1. Preheat oven to 325°F (165°C). In a large oven-safe Dutch oven, melt the butter over medium heat, then add the carrots and sweet potatoes and stir to coat for about 2 minutes.

  2. 2

    2. Add the dried apricots, orange juice, broth, and orange zest, stirring to combine everything in the pot.

  3. 3

    3. Drizzle the honey over the mixture, then sprinkle in the cinnamon, ginger, nutmeg, and salt, stirring gently so the spices distribute evenly.

  4. 4

    4. Bring the liquid to a gentle simmer on the stovetop, then cover the pot and transfer to the oven. Braise for 1 hour.

  5. 5

    5. Uncover the pot, stir gently, and return to the oven uncovered for 30 more minutes, until the vegetables are very tender and the syrup has thickened to a glossy glaze.

  6. 6

    6. Let rest for 5 minutes before serving; the glaze will continue to thicken slightly as it cools.
