Bright, unfiltered apple juice pressed at home — no sugar, no shortcuts.
1. Wash and core the apples, then cut them into quarters small enough to fit your juicer feed tube. No need to peel.
2. Run the apple pieces through a centrifugal or masticating juicer, alternating varieties to balance sweetness and tartness.
3. Stir in the lemon juice immediately to slow oxidation and keep the juice bright in color.
4. If you prefer a smoother texture, pour the juice through a fine mesh strainer or cheesecloth into a pitcher, pressing gently.
5. Add ground ginger if using, stir well, then pour over a glass packed with ice and serve immediately.
