Tart cranberries cooked down with rosemary and orange into a glossy, jewel-toned sauce.
1. Combine the cranberries, sugar, orange juice, and orange zest in a medium saucepan over medium heat, stirring until the sugar begins to dissolve.
2. Add the rosemary sprigs and cinnamon, then bring the mixture to a gentle boil.
3. Reduce heat to medium-low and simmer, stirring occasionally, until the cranberries burst and the sauce thickens noticeably, about 12-15 minutes.
4. Remove the rosemary sprigs and add a pinch of salt, tasting and adjusting sweetness if needed.
5. Transfer to a small ceramic bowl and let cool to room temperature; the sauce will continue to set as it cools.
6. Before serving, drag a fresh rosemary sprig gently across the glossy surface as a fragrant garnish.
