German pot roast marinated in vinegar and spices, served with red cabbage and potato dumplings.
1. Combine red wine vinegar, red wine, broth, onion, carrots, celery, garlic, bay leaves, cloves, juniper berries, and peppercorns in a saucepan and bring to a boil; let cool completely, then submerge the beef in the marinade, cover, and refrigerate for 3 to 5 days, turning the meat daily.
2. Remove the beef, pat it dry, and reserve the marinade; heat oil in a heavy Dutch oven over high heat and sear the roast on all sides until deeply browned, then remove and set aside.
3. Strain the marinade and add the liquid to the pot along with tomato paste and brown sugar; return the beef, bring to a simmer, cover, and braise over low heat for 2.5 to 3 hours until very tender.
4. Remove the beef and whisk crumbled gingersnaps into the braising liquid; simmer uncovered until the gravy thickens, then season and slice the meat.
5. While the beef braises, melt butter in a saucepan, add sliced red cabbage, grated apple, apple cider vinegar, a pinch of sugar, and salt; cook covered over medium-low heat for 45 minutes until tender.
6. Rice the boiled potatoes while still hot, mix in eggs, flour, nutmeg, salt, and pepper to form a dough, shape into golf-ball-sized dumplings, and simmer in salted water for 15 minutes until they float and are cooked through; serve everything together with the gravy spooned over the sliced beef.
