⏱ 15 minServes 415 min prep0

Ingredients

  • 250g ripe camembert, rind removed and cubed
  • 80g unsalted butter, softened
  • 100g cream cheese, room temperature
  • 50ml wheat beer, plus more for drizzling
  • 1 small yellow onion, finely diced
  • 1 tsp sweet paprika, plus extra for garnish
  • 1/2 tsp caraway seeds, lightly crushed
  • Salt and freshly ground black pepper to taste
  • 4 radishes, thinly sliced, for garnish
  • 2 tbsp fresh chives, finely chopped, for garnish

Steps

  1. 1

    1. Let the camembert and butter sit at room temperature for at least 30 minutes until fully softened.

  2. 2

    2. Mash the camembert with a fork in a bowl until mostly smooth, then beat in the softened butter and cream cheese until well combined.

  3. 3

    3. Stir in the diced onion, paprika, and caraway seeds, then pour in the beer and mix until the spread is creamy and slightly loose.

  4. 4

    4. Season generously with salt and pepper, then taste and adjust paprika or caraway as needed.

  5. 5

    5. Transfer to a crock or shallow bowl, smooth the top, and refrigerate for at least 30 minutes to let the flavors meld.

  6. 6

    6. Before serving, arrange sliced radishes on top, scatter chives over, dust with paprika, and drizzle a thin stream of cold beer around the edges.
