Atole

A thick, warming masa drink scented with cinnamon — the kind that anchors a slow morning.

⏱ 20 minServes 25 min prep15 min cook

Ingredients

  • 1/4 cup masa harina
  • 3 cups whole milk
  • 1 cup water
  • 1 cinnamon stick
  • 3 tablespoons piloncillo, grated (or brown sugar)
  • 1/2 teaspoon pure vanilla extract
  • pinch of salt

Steps

  1. 1

    1. Whisk the masa harina into the water in a medium saucepan until fully dissolved with no lumps remaining.

  2. 2

    2. Add the milk, cinnamon stick, piloncillo, and salt, then place the pan over medium heat.

  3. 3

    3. Stir continuously with a wooden spoon or whisk as the mixture heats, preventing the masa from settling and scorching on the bottom.

  4. 4

    4. Once the atole begins to thicken and small bubbles form at the edges, reduce heat to low and simmer for 8–10 minutes, stirring constantly, until it coats the back of a spoon.

  5. 5

    5. Remove the cinnamon stick, stir in the vanilla extract, then taste and adjust sweetness.

  6. 6

    6. Ladle into warmed mugs and serve immediately while steam is still rising.
