Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 2 tbsp soy sauce
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or brown sugar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup Creamy Peanut Butter
  • 2 tbsp NON-GMO AVOCADO OIL EXPELLER PRESSED
  • 1/4 cup hot water (for sauce)
  • Wooden or metal skewers

Steps

  1. 1

In a bowl, combine chicken pieces with 1 tbsp soy sauce, 1 tsp lime juice, 1 tsp honey, 1/2 tsp ginger, and minced garlic; marinate for at least 30 minutes.

  2. 2

While chicken marinates, prepare the peanut sauce: whisk together Creamy Peanut Butter, remaining 1 tbsp soy sauce, 1 tbsp lime juice, 2 tsp honey, 1/2 tsp ginger, and gradually add hot water until smooth and pourable.

  3. 3

    Thread marinated chicken onto skewers.

  4. 4

Heat 1 tbsp NON-GMO AVOCADO OIL EXPELLER PRESSED in a large skillet over medium-high heat, or preheat grill to medium.

  5. 5

Cook skewers for 3-5 minutes per side, until chicken is cooked through and lightly charred.

  6. 6

Serve chicken skewers hot with the creamy peanut sauce for dipping.
