Crispy, blistered jalapeños stuffed with a tangy cream cheese filling and finished with fresh cilantro.
1. Preheat oven to 425°F and line a baking sheet with foil. Halve and seed the jalapeños, leaving the stems intact.
2. In a bowl, beat together the cream cheese, shredded cheddar, garlic, green onions, smoked paprika, cumin, salt, and pepper until well combined.
3. Spoon the filling generously into each jalapeño half, mounding it slightly above the pepper's edge.
4. Arrange the stuffed jalapeños on the prepared baking sheet and roast for 18 to 22 minutes, until the peppers are blistered and the cheese is bubbling and golden in spots.
5. Remove from the oven, transfer to a serving platter, and immediately scatter the fresh cilantro over the top before serving.
